Made exclusively from Vermentino, it combines delicate floral aromas with citrus, Mediterranean herbs and a fine mineral freshness, making it an elegant choice for relaxed summer drinking and Mediterranean cuisine.

Tasting Notes
The wine has a bright straw-yellow colour. On the nose, delicate white flowers mingle with lively citrus notes and hints of Mediterranean scrub. The palate is crisp and refreshing, with subtle flavours of thyme and rosemary supported by a persistent mineral character. Its balanced, aromatic style is best enjoyed while young, when its freshness and vibrant bouquet are at their most expressive.

Production
Produced in Salento, where the warm Mediterranean climate helps Vermentino develop ripe fruit while retaining refreshing acidity, the grapes are gently handled to preserve their aromatic character. After destemming, they undergo a few hours of cool skin contact before pressing to extract maximum fragrance from the skins. Fermentation takes place in stainless steel at approximately 15°C, followed by around five months of maturation in stainless steel tanks. This temperature-controlled approach preserves the grape’s natural bouquet and freshness.

Food & Serving
Serve chilled at 8–10°C. San Marzano Timo Vermentino pairs beautifully with grilled fish, seafood pasta, prawns, fresh salads, light antipasti and dishes flavoured with herbs such as thyme and rosemary. It is best served without decanting; simply open shortly before serving to allow its delicate aromas to emerge.
