Saltaren Wines Edilia Riesling is a finely crafted Rheingau white that reflects a deeply natural approach to winemaking, with minimal intervention and a strong sense of place. Named after founder Alex Saltaren Castro’s grandmother and inspired by Pachamama, the wine carries both personal meaning and a quiet reverence for nature.

Tasting Notes
Delicate and restrained in style, Edilia Riesling shows a subtle, highly nuanced profile rather than overt fruitiness. Expect a pale, polished appearance, a shy aromatic nose with hints of citrus, stone fruit, and gentle floral notes, and a palate that feels precise, filigree, and beautifully composed. The long ageing on full lees adds texture and depth, while the use of oak softens the wine without masking its purity. It is built more on elegance and detail than power, and should develop gracefully over time, gaining complexity and layering with bottle age.

Production
The grapes come from a vineyard in Mittelheimer St. Nikolaus in the Rheingau, a site known for its notable neighbors and distinctive terroir. The fruit was pressed in a restored basket press, then aged for a full year in 300-liter wooden barrels on the lees, with as little technological interference as possible to preserve the wine’s natural expression.

This Riesling is best enjoyed with refined dishes that match its delicate structure, such as freshwater fish, shellfish, lightly seasoned poultry, vegetarian cuisine, or mildly aged cheeses. Serve well chilled, around 8–10°C, and consider short decanting only if desired, though it is often best appreciated straight from the bottle to preserve its subtle character.
