Tasting Notes
In the glass, the 1985 Salon Blanc de Blancs Le Mesnil pours a deep, luminous gold with a refined, persistent bead that speaks to long aging on the lees. The nose is complex and layered, with notes of brioche, toasted hazelnuts, baked apple, candied citrus peel and hints of acacia honey, chalk and dried flowers, evolving with air into aromas of crème brûlée, marzipan and subtle truffle.
On the palate, the wine is both powerful and ethereal, balancing mature tertiary complexity with remarkable freshness. Flavors of dried orchard fruits, lemon curd, roasted almonds and buttered pastry unfold over a precise, chalk-driven backbone. Production
Salon Blanc de Blancs is crafted exclusively from Chardonnay grown in the grand cru village of Le Mesnil-sur-Oger on the Côte des Blancs, a terroir famed for its pure chalk soils, cool climate and exceptional tension and minerality. Grapes are harvested by hand from a small selection of old-vine parcels, ensuring only the finest fruit makes it into the cuvée. In line with Salon’s philosophy, the wine is produced from a single vintage with no reserve wines, fermented in stainless steel to preserve purity, and then aged for many years on its lees in bottle before disgorgement. This extended maturation allows the wine to develop its characteristic depth, creamy texture and remarkable longevity without losing the incisive mineral line that defines Le Mesnil.
Food & Serving
This mature 1985 Salon is best paired with refined, delicately prepared dishes that echo its complexity: think lobster or scallops with a light butter or citrus sauce, turbot or sole, caviar, or simple yet luxurious preparations of roast chicken with morels or truffle. Aged hard cheeses such as Comté or Parmesan can also make a superb match. Serve cool but not too cold, ideally around 10–12°C (50–54°F), to allow the full spectrum of aromas to unfurl. Decanting is not strictly necessary, but gently pouring into a large-bowled white wine glass and giving it time to open in the glass will reward patience.
