Tasting Notes
In the glass, Obvius Rosato shows a luminous pale cherry to onion-skin pink hue, with crystal clarity despite being unfiltered, and a delicate, almost shimmering rim. The nose is immediately inviting: wild strawberries, pomegranate and sour cherry are layered with hints of blood orange, rose petals and a faint herbal nuance reminiscent of thyme and fresh fennel fronds. On the palate, it is dry, crisp and refreshing, with a juicy core of red berries, cranberry and pink grapefruit, framed by lively acidity and a subtle saline edge that keeps everything mouthwatering. The texture is pleasantly tactile, with a gentle grip from the skins lending structure without heaviness. The finish is clean, precise and slightly savory, encouraging another sip. While this rosé is at its most charming and vibrant within 2–3 years of the vintage, well-stored bottles can hold their freshness for a short additional period, developing a touch more spice and complexity over time.

Production
The grapes for Salcheto Obvius Rosato are sourced from three organically farmed Tuscan vineyards—Salcheto, Poggio Piglia and Il Greppo—where Sangiovese thrives in a mix of clay-limestone and stony soils at moderate altitude. The vineyards are cultivated with a strong focus on biodiversity and low environmental impact, with careful hand work throughout the season to ensure healthy, balanced fruit. Harvest is typically done by hand at optimal ripeness to preserve brightness and natural acidity. In the cellar, Obvius is vinified in stainless steel, with a gentle pressing and a relatively short skin contact to achieve the delicate rosé color. Fermentation occurs spontaneously with indigenous yeasts, and the wine is matured in steel on its fine lees, without any additions—no selected yeasts, no added sulfites, no tannin or other oenological aids—and it is bottled unfiltered to preserve its “pure fruit” character.

This Tuscan rosato is a versatile partner at the table, pairing beautifully with antipasti, charcuterie, grilled vegetables, caprese salad, seafood pasta, grilled prawns and simply prepared white meats such as herb-roasted chicken or turkey. It also works well alongside lighter Mediterranean dishes, sushi and flavorful salads with fresh herbs and citrus. Serve well-chilled at around 8–10°C (46–50°F) to highlight its crispness and aromatic lift. Decanting is generally not necessary, though opening the bottle a few minutes before serving and giving it a gentle swirl in the glass will help the natural aromas fully express themselves.
