Tasting Notes
In the glass, this Viognier shows a beautiful pale golden-yellow hue with bright, youthful reflections. The nose is immediately engaging, offering fresh and intense aromas of ripe apricot, white peach and a touch of sweet citrus, underpinned by subtle floral notes and a hint of tropical fruit. On the palate, the wine is generous and fruit-forward, with concentrated flavors of juicy apricot and stone fruit wrapped in a silky texture. The natural richness of Viognier is balanced by a lively, refreshing acidity that keeps the finish clean and vibrant rather than heavy. This is a wine designed for enjoyment in its youth, best enjoyed within 2–3 years of the vintage to capture its full aromatic intensity and bright, charming fruit.

Production
Domaine Saint-Georges d’Ibry lies on around 40 hectares in the heart of the IGP Côtes de Thongue, benefitting from a classic Mediterranean climate with abundant sunshine and cooling influences that help preserve freshness in the grapes. The estate’s varied soils—shaped by an ancient seabed and rich in limestone and marine fossils—are particularly well suited to aromatic whites like Viognier, offering both good drainage and mineral nuance. The grapes are harvested at optimal ripeness to capture both aroma and acidity, then gently pressed and vinified in temperature-controlled conditions to preserve their delicate, expressive character. The focus is on clean, precise winemaking that lets the varietal speak clearly, with minimal oak influence so that the fruit, terroir and natural texture of Viognier remain front and center.

Food & Serving
This Viognier is a versatile partner at the table, pairing beautifully with a wide range of starters as well as fish, shellfish and crustaceans. Try it with grilled prawns, scallops, lobster, seared tuna, or delicately spiced Asian dishes, as well as creamy seafood pastas, goat cheese salads or poultry in light, aromatic sauces. Serve chilled at around 8–10°C to highlight its freshness and aromatics. Decanting is not necessary, but opening the bottle 10–15 minutes before serving will allow the fruit and floral notes to fully unfold in the glass.
