Saint-Georges Thongue Fût Blanc 2023 is an elegant, barrel-aged Chardonnay from the sun-drenched Côtes de Thongue in Languedoc. Crystalline and finely sculpted, it brings together ripe Mediterranean fruit with a deft touch of oak. This cuvée showcases Domaine Saint-Georges d'Ibry’s long-standing commitment to crafting expressive, characterful whites that punch well above their modest IGP status.

Tasting Notes
In the glass, this Chardonnay shows a clear, bright, light-gold hue with subtle green reflections, underlining its freshness. The nose is generous and refined, with aromas of candied citrus and stone fruits, layered with notes of toasted bread, vanilla, and a hint of sweet spice from the barrel. On the palate, Fût Blanc 2023 is round and supple, with a creamy texture that never feels heavy. Ripe orchard fruits and confit lemon are wrapped in well-judged oak, giving a gentle toast and vanilla lift without overpowering the fruit. The acidity is balanced and precise, carrying the flavours into a long, persistent finish marked by finesse and a touch of salinity. Enjoy it now for its vibrant, youthful charm, or cellar for 3–5 years to gain additional complexity and integrate the oak even further.

Production
Domaine Saint-Georges d’Ibry lies on about 40 hectares in the heart of IGP Côtes de Thongue, where a Mediterranean climate, abundant sunshine and cooling influences shape the vines. The Chardonnay for Fût Blanc is planted on limestone-rich, fossil-studded ‘coquillier’ soils—former seabed that naturally limits yields and enhances concentration, minerality and aromatic finesse in white wines. Grapes are harvested at optimal ripeness to retain freshness while delivering full flavour, then carefully sorted and gently pressed. Fermentation and aging take place in oak barrels (as the name “Fût Blanc” suggests), allowing the wine to gain its characteristic notes of toast and vanilla, as well as a rounded, harmonious texture, while the winemaking remains focused on preserving purity of fruit and terroir expression.

Food & Serving
This barrel-aged Chardonnay pairs beautifully with richer seafood dishes such as seared scallops, grilled prawns or butter-poached lobster. It is equally at home alongside roast chicken, veal in a light cream sauce, mushroom risotto or a selection of semi-hard cheeses like Comté or Gruyère. Serve at 10–12°C to highlight both its freshness and its creamy palate. A light decant of 20–30 minutes can help the oak notes integrate and the aromatic profile fully open, especially if the wine is served in its youth.
