In the glass, the 2005 Le Secret de Sabon shows a deep ruby core with hints of garnet on the rim, reflecting both its concentration and graceful age. The nose is intense and layered, opening with black raspberry and redcurrant, followed by wild garrigue, dried thyme, licorice, and a whisper of smoked herbs and spice.
On the palate, this is full-bodied, rich, and powerful, yet remarkably poised and balanced. Le Secret de Sabon comes from select parcels in Châteauneuf-du-Pape, rooted in classic Southern Rhône terroir of galets roulés (rounded river stones), sand, and clay that help Grenache reach optimal ripeness while retaining elegance. The fruit is sourced from low-yielding, old vines, typically harvested by hand at perfect maturity to preserve intensity and purity. Vinification traditionally involves gentle extraction to avoid over-extraction in such concentrated fruit, followed by 18 months of aging in demi-muids (large oak casks), which lend texture and polish without overwhelming the wine’s natural character. The result is a cuvée that marries richness, aromatic complexity, and a sense of place.
Food & Serving
This Châteauneuf-du-Pape calls for richly flavored, Mediterranean-inspired dishes: think slow-braised lamb shanks with rosemary, duck confit, beef daube Provençale, or grilled venison with herb-infused jus. It also pairs beautifully with roasted game birds, truffle dishes, and aged hard cheeses such as Comté or Manchego. Serve at around 16–18°C (60–64°F) to highlight both fruit and spice. Given its age and density, decanting for 1–2 hours is recommended to let the wine fully open and to gently separate it from any natural sediment.
