Crafted from Glera grapes grown in the prized Salter area, it delivers a drier, more refined style that appeals to lovers of crisp sparkling wines. As a Prosecco Superiore from Valdobbiadene, it carries the prestige of one of the most historic and elevated zones for high-quality Italian sparkling wine.

Tasting Notes
In the glass, this Prosecco shows a pale straw-yellow color with silvery highlights and a fine, persistent mousse. The bubbles are delicate yet energetic, forming a refined crown at the rim. On the nose, expect lifted aromas of crunchy green apple, Bartlett pear, white peach, and fresh citrus zest, layered with notes of white flowers, acacia, and a subtle hint of wet stone. The Extra Brut style keeps the focus on purity and freshness rather than sweetness. The palate is dry, bright, and linear, with lively acidity and a clean, saline minerality that reflects its hillside origins. Production
Sourced from vineyards in the Valdobbiadene hills, the Salter cru benefits from steep slopes, excellent sun exposure, and well-drained, mineral-rich soils that contribute to the wine’s tension and finesse. Grapes are typically harvested by hand to ensure only healthy, perfectly ripe Glera clusters are selected, preserving delicate aromatics. After a gentle pressing, the base wine is fermented in temperature-controlled stainless steel to retain freshness, then undergoes a second fermentation in pressurized tanks (Charmat-Martinotti method). The Extra Brut dosage is kept very low, highlighting the terroir’s natural acidity and minerality rather than residual sweetness.

Food & Serving
This Extra Brut Prosecco is a fantastic match for oysters, shrimp, sashimi, and other delicate seafood, as well as light appetizers, sushi, vegetable tempura, and fresh goat cheese or mozzarella. It also shines with salty snacks like prosciutto, olives, and crisp fried bites. Serve well chilled at around 6–8°C (43–46°F) to emphasize its freshness and fine bubbles. Decanting is not necessary; simply open and pour, ideally in white wine or tulip-shaped sparkling glasses to concentrate its aromas.
