Production
Ruggeri sources the Glera grapes for Giall'Oro from the hilly vineyards of Valdobbiadene, where the combination of steep slopes, well-drained soils, and a temperate climate creates ideal conditions for expressive, aromatic sparkling wines. Grapes are typically harvested by hand to ensure optimal ripeness and gentle handling, preserving the delicate character of the fruit. After careful pressing, the base wine is fermented in temperature-controlled stainless steel tanks, followed by a second fermentation using the Charmat (Martinotti) method in pressurized tanks. This controlled, cool secondary fermentation helps retain bright fruit aromas and fine bubbles, resulting in a Prosecco that is both pure and polished.

This Prosecco Superiore is a natural choice as an aperitif, pairing beautifully with light canapés, fresh seafood, sushi, and delicate antipasti such as prosciutto, melon, or mild cheeses.
