Roger Sabon’s Cuvée Le Secret des Sabon 2009 is a rare, highly limited Châteauneuf-du-Pape that captures the depth and personality of old-vine Grenache at its most expressive. Produced in tiny quantities from exceptionally low yields, it has become one of the estate’s most coveted bottlings, admired for its concentration, intensity, and remarkable aging potential.

Tasting Notes
In the glass, this 2009 shows a dark black-purple core, hinting at its power and youthful intensity despite its age. The nose is layered and complex, unfolding with smoke, tobacco leaf, creosote, black currants, black cherries, graphite, licorice, flowers, and earthy notes, with an almost tea-like, savory nuance that adds intrigue. The palate is massive, full-bodied, and deeply concentrated, combining ripe blackberry and kirsch fruit with spice, earth, and a mineral edge. Rich and mouthfilling, it has the structure and depth to continue evolving for decades, with optimal drinking likely after further cellaring. Expect a long life ahead, with a drinking window that can comfortably stretch 25–30 years or more from the vintage.

Production
This wine comes from the Châteauneuf-du-Pape appellation in the southern Rhône, where warm Mediterranean conditions, sun-drenched vineyards, and the region’s famed galet-strewn terroir help Grenache achieve exceptional ripeness and complexity. The cuvée was produced from very low yields of around 20 hectoliters per hectare, emphasizing concentration and quality, and was aged in 600-liter demi-muids to preserve fruit purity while adding subtle texture and complexity.

Food & Serving
This is a natural match for rich, slow-cooked dishes such as lamb shoulder, beef short rib, duck confit, venison, or game birds, as well as truffle-driven and mushroom-based recipes. Serve at around 16–18°C, and decant for several hours if opening young or from a bottle showing youthful structure, to allow the aromas and texture to fully open.
