Roger Sabon’s Châteauneuf-du-Pape Cuvée Le Secret des Sabon 2001 is a rare, deeply expressive Grenache from one of the appellation’s most compelling old-vine bottlings. Celebrated for its intensity, purity, and seamless balance, it captures both the generosity of the southern Rhône and the finesse of artisanal winemaking.
Tasting Notes
In the glass, it shows an inky ruby-purple core that hints at its depth and concentration. The nose is intensely layered with cassis, blackberry, roasted herbs, graphite, wood smoke, licorice, and savoury notes of roasted meats and bouquet garni.
The palate is opulent and full-bodied, with a viscous, almost velvety texture that remains remarkably precise. Despite its massive scale, the wine stays beautifully balanced, with integrated acidity, fine tannins, and warming alcohol supporting a long, resonant finish. While it has already shown beautifully, it also has the structure to continue evolving gracefully over time.
Production
Made in Châteauneuf-du-Pape in the southern Rhône, this cuvée comes from ancient Grenache vines that contribute exceptional concentration and aromatic complexity. The region’s famous galets roulés, sun-drenched climate, and low-yielding vineyards create ripe, powerful fruit with natural freshness. Vinification at this level is typically geared toward preserving purity, texture, and the character of the old vines, with a focus on careful extraction and élevage that allows the wine’s layered personality to emerge.
Food & Serving
Best enjoyed with richly flavoured dishes such as slow-roasted lamb, beef short rib, game, wild mushroom ragout, or herb-crusted duck. It also pairs well with aged hard cheeses and Mediterranean dishes featuring rosemary, thyme, and olives. Serve at 16–18°C, and decant for at least 1–2 hours if opening now to help the aromas fully unfold.
