Tasting Notes
In the glass, Baffonero 2020 presents a deep, almost opaque ruby color with vibrant purple highlights at the rim, hinting at its youth and concentration. The nose is intense and layered, revealing dark plum, black cherry, and blackberry compote woven with notes of violet, cocoa, graphite, and sweet baking spices, alongside subtle hints of tobacco and cedar from fine oak aging. On the palate, the wine is full-bodied, rich, and velvety, with ripe, dark fruit at the core—think black plum, cassis, and blackberry—supported by polished yet assertive tannins. Nuances of dark chocolate, espresso, and licorice unfold with air, giving impressive depth and complexity. The acidity is fresh and well-integrated, lending lift and balance to the wine’s generous texture and long, savory finish. Production
The Baffonero vineyard lies at the foot of Rocca di Frassinello’s striking winery, designed by renowned architect Renzo Piano, with an ideal exposure to capture both the warmth of the Tuscan sun and cooling coastal breezes from the Tyrrhenian Sea. The soils in this part of Maremma are typically a mix of clay, limestone, and mineral-rich elements, giving both power and finesse to Merlot. Grapes for Baffonero are sourced from low-yielding vines and are carefully harvested by hand at optimal ripeness to ensure only the best fruit makes it to the winery. After meticulous sorting, fermentation takes place in temperature-controlled vessels to preserve aromatics and achieve precise extraction of color and tannin. The wine is then aged in small French oak barrels—largely new or of recent use—to add structure, spice, and complexity, before further maturation in bottle to harmonize its components.

Food & Serving
This concentrated Merlot pairs beautifully with richly flavored dishes such as slow-braised beef, lamb shanks, roast venison, or prime rib, as well as Tuscan classics like bistecca alla fiorentina or wild boar ragù. It also works well alongside aged hard cheeses and truffle-infused dishes that echo its earthy undertones.
