The lees ageing brings texture and structure, adding a subtle sense of breadth without obscuring the wine’s precision. Production
This wine comes from organic vineyards in Fuissé, in the heart of Bourgogne, where the Denogent family has tended old vines since the early 20th century. The emphasis on healthy soils and sustainable farming helps Chardonnay express a clear sense of place, with a defined, terroir-driven character. In the cellar, fermentation begins naturally with indigenous yeasts, followed by 19 months of lees ageing to build depth and structure. The wine is bottled without filtration or fining, preserving its authenticity and energetic profile.
