Crafted from traditional local grapes and bottled with a gentle natural sparkle, it delivers a blend of rustic charm and refined drinkability that’s perfect for authentic Italian dining. This non-vintage cuvée draws on the estate’s long experience in Emilia-Romagna, offering a classic yet vibrant expression of the region’s most famous frizzante style.

Tasting Notes
In the glass, Vecchio Moro shows an intense, almost inky ruby-purple hue topped with a lively, fine mousse and a delicate froth at the rim. The nose is expressive and inviting, with notes of ripe black cherries, crushed blackberries, violets, and dark plums, supported by hints of dried herbs, cocoa, and a faint earthy spice that speaks of its rustic origins. On the palate, this Lambrusco is dry to just off-dry, with juicy dark fruit flavors—think black cherry, cassis and wild berries—wrapped in fresh, mouthwatering acidity and a pleasantly firm, lightly grippy tannic backbone. The frizzante bubbles are gentle but persistent, adding lift and freshness to the wine’s generous fruit and savory undertones. The finish is clean and moreish, with a subtle bitter-cherry twist that makes you immediately want another sip. While designed for early enjoyment to capture its vibrancy and primary fruit, it can rest for a couple of years in bottle, gaining a touch of softness and complexity without losing its charm.

Production
The grapes for Rinaldini Lambrusco Vecchio Moro come from estate vineyards in Emilia-Romagna, where the clay- and silt-rich soils and temperate continental climate provide ideal conditions for Lambrusco Grasparossa, Ancellotta, and Marzemino. Yields are kept in check to ensure concentration of flavor, and the grapes are typically harvested by hand at optimal ripeness to preserve both freshness and structure. After a gentle crushing, the must undergoes a temperature-controlled fermentation on the skins to extract color, aroma, and the characteristic tannins of Grasparossa. The secondary fermentation that creates the frizzante sparkle is carried out in pressurized tanks (Charmat/ Martinotti method), allowing Rinaldini to capture the vibrant fruit and freshness that define the style, before bottling under pressure to maintain the wine’s fine, creamy bubbles.

Food & Serving
This is a quintessential food Lambrusco, made to sit at the center of a hearty table. It pairs beautifully with rich cured meats such as prosciutto, mortadella, salami, and culatello, as well as classic Emilia-Romagna dishes like lasagne, tagliatelle al ragù, stuffed pastas, and roasted or grilled pork and sausages. Its freshness and gentle tannins also make it a great match for pizza, burgers, charcuterie boards, and aged or semi-hard cheeses such as Parmigiano-Reggiano and Grana Padano. Serve well-chilled, around 10–12°C, for maximum refreshment and aromatic lift. Decanting is not necessary, but opening the bottle a few minutes before serving can help the aromas fully unfurl.
