Ridge Vineyards Cabernet Sauvignon Estate 2021 is the more approachable companion to the legendary Monte Bello, sourced from the same vineyard but from younger vines. Built around Cabernet Sauvignon with supporting Merlot, Cabernet Franc, and Petit Verdot, it delivers Ridge’s hallmark precision, depth, and restraint in a wine that drinks beautifully earlier than its famous sibling.

Tasting Notes
In the glass, it shows a deep color with a subtle purple edge. The nose opens with blueberry, cassis, liquorice, cola, and a touch of sweet oak, giving way to a layered and polished aroma profile. The palate is full and elegant, with flavors of ripe blackberry, cherry, freshly roasted coffee beans, pencil lead, and sweet tobacco. Despite its richness, the wine remains balanced and refined, with enough structure to age well for several years, though it is already highly enjoyable now.

Production
The fruit comes from Monte Bello Vineyard in California, where younger vines contribute to the Estate bottling. Grapes are destemmed on arrival but fermented as whole berries with native yeast, following Ridge’s minimal-intervention philosophy. The wine is aged for 19 months in air-dried American oak barrels, 50% new, adding subtle spice and complexity without overwhelming the fruit.

Food & Serving
This Cabernet Sauvignon pairs well with grilled ribeye, roast lamb, braised short ribs, and dishes with mushrooms or peppery sauces. Serve at around 16–18°C, and decant for about 1–2 hours if drinking young to allow the aromatics and structure to open fully.
