Tasting Notes
In the glass, the wine shows a bright, pale color that hints at its youthful energy. The nose is clean and inviting, with notes of green apple, citrus, and a subtle mineral edge that reflects its Chablis influence. On the palate, it is fresh and intense, balancing ripe fruit with crisp acidity and a rounded texture. Green apple and citrus remain at the forefront, supported by a fine, chalky minerality that adds definition and length. While already highly enjoyable now, it should also hold up nicely over the next few years as its texture and complexity continue to develop.

Production
This Bourgogne Blanc is made entirely from Chardonnay, with the majority of the fruit coming from Chablis, a source well known for producing wines of tension, clarity, and finesse. The grapes are vinified with fermentation in oak barrels, followed by aging for a little over a year in used barrels, allowing the wine to gain subtle breadth and texture without overt oak influence.

Food & Serving
This wine pairs beautifully with grilled fish, roast chicken, shellfish, creamy pasta dishes, and light goat cheese. Serve it chilled at around 10–12°C to preserve its freshness and aromatic lift, and decanting is generally not necessary, though a short opening before serving can help the wine unfold in the glass.
