Tasting Notes
In the glass, Les Robinettes Chardonnay 2023 presents a luminous pale straw color with subtle green reflections, hinting at both youth and freshness. The nose opens with precise, chiselled aromas: citrus zest, green apple and pear, followed by layers of white flowers, crushed shell, and a delicate touch of hazelnut and spice from its barrel élevage.
On the palate, the wine is taut yet ample, with a fine, linear acidity that frames the fruit. Flavors of lemon curd, crisp orchard fruits and chalky minerality unfold gradually, joined by hints of brioche and lightly toasted oak that never dominate. The finish is long, saline and persistent, emphasizing the stony core of the terroir. While already expressive in its youth, the structure and mineral backbone suggest very good aging potential over the next 5–8 years, during which the texture should broaden and the aromatics gain further complexity.
Production
Les Robinettes is sourced from young Chardonnay vines planted in 2020 on a clearly mineral, limestone-rich terroir in Burgundy, where thin, stony soils help concentrate flavor and preserve vibrant acidity. The use of massale selection—propagating vines from old, high-quality stock rather than clones—adds natural diversity and nuance to the final wine. Grapes are harvested by hand to preserve fruit integrity, then undergo direct pressing to obtain a pure, clear must with minimal phenolic extraction. Fermentation takes place in barrels, followed by an extended 18-month aging in wood, allowing the wine to integrate its oak influence slowly, gain texture and refine its complex aromatic profile while maintaining a strong, mineral imprint of the site.
Food & Serving
This Chardonnay is a natural partner for refined, subtly prepared dishes: think oysters, scallops in a light butter or citrus sauce, grilled white fish, poached turbot, or roast chicken with herbs. It also works beautifully with creamy cheeses like Brie, mild goat cheese, or young Comté, where its freshness and minerality cut through richness. Serve at around 10–12°C (50–54°F) to balance aromatic expression with tension; slightly cooler for aperitif service, slightly warmer at the table. A brief decant of 15–30 minutes in a carafe can help open the nose and soften the structure, especially in its first few years after release.
