Quintodecimo’s Fiano di Avellino Exultet is a benchmark white from Campania, offering a refined expression of 100% Fiano with both precision and depth. Crafted under the guidance of Luigi Moio, one of Italy’s most respected winemakers, it combines regional character, elegant oak influence, and the distinctive freshness that has made Fiano di Avellino one of southern Italy’s most admired white wines.

Tasting Notes
In the glass, it shows a bright pale yellow color with vivid green reflections, hinting at its freshness and energy. The bouquet opens with lime, acacia blossom, and thyme, then broadens into more layered aromas of exotic fruit, candied citrus, and a gentle touch of honey. On the palate, the wine is dense and continuous, yet never heavy, with a fine mineral backdrop that keeps the finish lifted and precise. The partial maturation in French oak adds subtle texture and complexity, while its balance and structure suggest very good aging potential over the next several years.

Production
The grapes are hand-selected on sorting tables as they arrive at the cellar, then gently pressed and statically settled before fermentation. Vinification takes place partly in stainless steel and partly in French oak barrels at controlled temperatures between 6 and 14°C, preserving aromatic purity while building richness and nuance. After fermentation, the wine matures for 10 months in a combination of steel and French oak, reflecting both the freshness of the Fiano grape and the polished style of Quintodecimo.

Food & Serving
This is a superb match for refined seafood dishes, shellfish, grilled prawns, creamy risottos, and baked fish, as well as white meats and aged cheeses with moderate intensity. Serve chilled at around 10–12°C, and consider brief decanting only if you want to open up the wine’s aromatic layers more quickly.
