Quilceda Creek Cabernet Sauvignon 2014

Quilceda Creek Cabernet Sauvignon 2014 is a superb Washington State Cabernet from one of the region’s most celebrated producers. Built entirely from Cabernet Sauvignon and sourced mainly from the legendary Champoux Vineyard, it combines impressive power with remarkable finesse and precision.

Tasting Notes
In the glass, it shows a deep, almost inky color that hints at its concentration. The nose is vivid and layered, offering blackcurrant, blackberry, and dark cherry alongside black truffle, violet, pencil lead, dark chocolate, and sweet pipe tobacco. The palate is full-bodied, rich, and beautifully structured, with ripe dark fruit wrapped around polished tannins and a refined vein of spice. Despite its intensity, the wine remains balanced and elegant, finishing with exceptional length. While already impressive, it has the depth and structure to age gracefully for 10 years or more.

Production
This wine comes from two highly regarded sites in the Horse Heaven Hills AVA: 90% Champoux Vineyard and 10% Mach One Vineyards. The warm, dry climate and well-suited soils of the area are especially favorable for Cabernet Sauvignon, allowing for full ripeness and concentration. Grapes are hand-harvested to preserve fruit quality, then gently fermented and aged for 20 months in 100% new French oak, adding structure, complexity, and a polished spicy character.

Food & Serving
This is a wine for richly flavored dishes such as grilled ribeye, braised short ribs, roasted lamb, or venison. It also pairs well with aged hard cheeses and dishes featuring mushrooms or truffles. Serve at around 16–18°C, and decant for at least 1–2 hours if drinking young to help the wine fully open up.
