Quilceda Creek Cabernet Sauvignon is one of Washington State’s most celebrated expressions of pure Cabernet, combining power, precision, and remarkable finesse. Sourced from two of the region’s most respected vineyards and crafted by Paul Golitzin, it reflects a long-standing commitment to making world-class Cabernet in the Columbia Valley.

Tasting Notes
In the glass, this wine shows a deep, nearly inky color that hints at its concentration and richness. The nose is intensely layered with blackcurrant, blackberry, and dark cherry, lifted by notes of violets, graphite, black truffle, dark chocolate, and sweet pipe tobacco. The palate is full-bodied and seamless, with plush dark fruit wrapped around polished tannins and a refined, spicy oak frame. Despite its generosity, the wine remains beautifully balanced and finishes with impressive length. It has excellent aging potential and should continue to develop complexity over a decade or more.

Production
This Cabernet Sauvignon is made from 90% Champoux Vineyard and 10% Mach One Vineyard, both located in the highly regarded Horse Heaven Hills AVA of Washington. The region’s warm days, cool evenings, and well-drained soils are especially well suited to Cabernet Sauvignon, allowing the grapes to ripen fully while retaining freshness. The fruit is hand-harvested, fermented gently, and aged for 20 months in 100% new French oak to build structure, depth, and aromatic complexity.

Food & Serving
Best enjoyed with rich dishes such as grilled ribeye, roast lamb, braised short ribs, or mushroom-based entrées. Serve at around 16–18°C, and consider decanting for 1–2 hours if drinking young, to allow the aromas and tannins to open fully.
