Tasting Notes

There is a distinct mineral tension and savory complexity that immediately evoke its hillside origins. Production
Ovello is one of Barbaresco’s northernmost and highest crus, a south/southwest-facing amphitheater of old vines rooted in calcareous clay and marl, with notable limestone content that imparts tension and minerality. The cool breezes and slightly higher elevation preserve Nebbiolo’s acidity and aromatic lift, while the predominantly manual harvest allows Produttori’s growers to pick at perfect physiological ripeness. In the cellar, the grapes are traditionally vinified with extended maceration on the skins to extract structure and complexity, followed by long aging in large, neutral Slavonian oak botti. This classical, low-intervention approach highlights the purity of the fruit and the distinctive, linear character of Ovello rather than masking it with new oak.
