Named after Victoria zu Salm-Salm, it reflects the house’s commitment to combining modern elegance with clear terroir expression.

Tasting Notes
In the glass, it shows a bright, refined profile with a sense of quiet power. The nose opens with ripe citrus, stone fruit, salted butter, and a subtle hint of toasted nuts, giving it a graceful balance between freshness and richness. The palate is taut and elegant, with a rounded texture, chalky mineral drive, and finely etched fruit leading to a dry, focused finish. It has the structure to develop further in bottle over the next few years, gaining complexity while retaining its precision and lift.

Production
The grapes come from a single vineyard site in Binger Scharlachberg, where red slate and quartz soils lend the wine its mineral edge and poised character. Harvested by hand, the fruit is spontaneously fermented, undergoes partial malolactic conversion, and matures for up to 10 months in used barriques, allowing the wine to gain texture without overpowering its delicate site-driven expression.

Food & Serving
This Chardonnay pairs beautifully with roast chicken, grilled lobster, pan-seared scallops, creamy pasta dishes, or fine mushroom-based plates. Serve chilled at around 10–12°C, and consider a short decant if opening it young to give the wine a little extra room to show its aromatics and texture.
