The grapes—Chardonnay, Pinot Meunier, and Pinot Noir (Pinot Nero)—are harvested at optimal maturity, typically by hand to preserve berry integrity and allow for careful selection. After gentle pressing, the base wines are fermented in temperature-controlled conditions and then blended across different parcels and vintages to achieve a consistent house style. The wine undergoes secondary fermentation in bottle following the traditional méthode champenoise, with an extended period of aging on the lees to build texture, fine bubbles, and those subtle brioche notes before disgorgement and a carefully judged Brut dosage.
