Ponson Champagne 1er Cru Extra Brut is a finely crafted grower Champagne that showcases the precision and elegance of premium Premier Cru vineyards in the Montagne de Reims. With a drier Extra Brut dosage, it puts the focus firmly on purity, minerality and terroir expression rather than sweetness. This non-vintage cuvée draws on the estate’s tradition of meticulous blending, capturing the timeless character of Champagne while remaining refreshingly modern in style.

Tasting Notes
In the glass, this Champagne shows a bright, pale straw colour with fine, persistent bubbles forming a delicate mousse. The nose is pure and focused, with aromas of green apple, lemon zest and white flowers layered over subtle notes of fresh brioche, chalk and a hint of almond. On the palate, Ponson 1er Cru Extra Brut is taut, crisp and linear, with a racy acidity that gives the wine both tension and length. Citrus and orchard fruits lead the way, supported by a chalky minerality and gentle autolytic notes of pastry and toasted nuts from time on the lees. The dry Extra Brut style keeps everything extremely clean and precise, making it especially food-friendly. Enjoy it now for its vibrancy and energy, or cellar for 3–6 years to allow further integration and complexity to emerge.

Production
Sourced from carefully tended Premier Cru vineyards in the Champagne region of France, this cuvée reflects the cool climate and chalk-rich soils that define the area’s finest sites. The traditional Champagne grape varieties are hand-harvested at optimal ripeness to preserve acidity and aromatics. In the cellar, Ponson Pascal follows classic méthode traditionnelle: gentle pressing, fermentation in temperature-controlled vessels, followed by extended ageing on the lees in bottle to build texture, complexity and finesse before disgorgement with a low Extra Brut dosage.

Food & Serving
This Extra Brut Champagne is a versatile partner at the table, shining alongside oysters, fresh shellfish, ceviche, sashimi, tartare, or simply a platter of fine charcuterie and soft goat cheese. It also pairs beautifully with light poultry dishes, tempura and delicately seasoned vegetable starters. Serve well-chilled at 8–10°C (46–50°F); a narrow tulip-shaped glass will showcase both the aromas and the mousse. Decanting is not necessary, but opening the bottle 10–15 minutes before serving allows the aromas to fully unfurl.
