Poli Vaca Mora is an Italian amaro liqueur from Schiavon in Veneto, named after the “black cow” steam train that once stopped outside the Poli family’s inn. It brings a piece of local history to the glass, recalling the herbal bitters once enjoyed by travellers waiting for the train.

Distillery
The story of Poli Distillerie begins with GioBatta Poli, who moved to Schiavon in 1885 and opened the Osteria al Cappello, selling wine and straw hats. When the Vaca Mora train began stopping nearby, travellers gathered at the inn for a drink while they waited. Poli Distillerie was established on the site in 1898, continuing a family connection to spirits in the town.
