Tasting Notes
Expect a deep amber-brown hue with warm highlights in the glass. The nose opens with a layered mix of dried herbs, citrus peel, roots, and subtle spice, followed by a gentle earthy bitterness that gives the amaro its classic shape. On the palate, it is smooth and balanced, combining herbal complexity with notes of orange zest, medicinal roots, and a lightly sweet finish that rounds out the bitterness. Vaca Mora Amaro Liquore is tied to the Veneto region and to the historic Poli family site in Schiavon, where the inn and later the distillery stood close to the route of the steam train. The spirit is made from an infusion of herbs, fruit peels, and roots, following a traditional bitter-style recipe that reflects the local culture of aperitivo and after-dinner liqueurs.

Food & Serving
Serve it slightly chilled, around 12-16°C, neat, over ice, or as a digestif after dinner. It pairs well with dark chocolate, almond-based desserts, citrus tarts, and also with aged cheeses; decanting is not necessary.

Poli Distillerie was established in 1898 on the grounds of the family’s inn in Schiavon, Veneto, building on the entrepreneurial legacy of GioBatta Poli, who had moved there a few years earlier to follow the growing importance of transport and trade. Today the Poli name is one of the best-known in Italian artisanal distilling, admired for its strong regional identity and long-standing commitment to traditional spirits.
