Tasting Notes
In the glass, the 2024 Sauvignon shines a pale straw yellow with delicate green reflections, signaling its youthful energy and cool-climate origin. The nose is expressive and finely etched: think freshly cut lime, grapefruit zest, and green apple, layered with elderflower, tomato leaf, and a touch of mountain herbs. Subtle mineral notes and a hint of white currant add complexity as it opens in the glass.
On the palate, this wine is crisp, linear, and beautifully focused, with lively acidity that gives it lift and length. Citrus and stone-fruit flavors—lemon, pink grapefruit, and a whisper of white peach—are wrapped around a stony, saline core that reflects its Alpine terroir. Production
The Sauvignon grapes are sourced from high-altitude vineyards in Trentino Alto Adige, where cool nights, warm days, and well-draining, mineral-rich soils allow for slow, even ripening and heightened aromatic intensity. Harvest is typically carried out by hand to ensure only perfectly healthy, optimally ripe bunches make it to the cellar. In keeping with Pojer e Sandri’s philosophy of gentle, minimal-intervention winemaking, the grapes are carefully pressed and the must is protected from oxidation, then fermented at controlled temperatures in stainless steel to preserve the grape’s natural aromatics and freshness. The wine is aged on fine lees for a period to add texture and complexity, before bottling without heavy filtration to retain its purity and sense of place.

Pojer e Sandri Sauvignon 2024 is a versatile partner at the table, especially with dishes that echo its freshness and aromatic lift. It pairs beautifully with seafood—think oysters, shrimp crudo, grilled prawns, or simply prepared white fish—as well as goat cheese, asparagus risotto, sushi, ceviche, and herb-driven dishes featuring basil, mint, or tarragon. Serve well chilled, around 8–10°C (46–50°F), to highlight its precision and invigorating acidity. Decanting is not essential, but pouring it into a slightly larger white wine glass and giving it a few minutes in the glass will allow the aromatics to fully blossom.
