Pojer e Sandri Molinar Extra Brut 2021 is an elegant rosé sparkling wine made exclusively from Pinot Meunier and produced according to the traditional method. Created in a historic mill in Trentino, it pays tribute to the origins of the Pojer e Sandri estate while showcasing the grape known as the “miller’s grape” in a distinctive, highly mineral style.
Tasting Notes
The wine presents a delicate powder-pink colour with refined, persistent bubbles. Its aromatic profile is rich and expressive, led by notes of small red berries and subtle nuances developed during its extended ageing on the lees. On the palate, it is completely dry and beautifully structured, with vibrant freshness and a pronounced saline, mineral character. The finish is long and lingering, balancing red-fruit flavour with an elegant savoury tension. It is ready to enjoy now, though its structure and extended lees ageing should allow it to develop further complexity over the medium term.
Production
The vineyards are located in Molini, between San Michele all’Adige and Faedo in Trentino-Alto Adige, at approximately 550 metres above sea level with a north-western exposure. The sedimentary soils, formed from marine Werfen strata, combine a silty-sandy texture with a calcareous conglomerate of sandstone, siltstone, marl and dolomite, contributing to the wine’s distinctive mineral and saline character. The grapes are harvested by hand, cooled and carefully washed before a short maceration and gentle pressing in a controlled atmosphere. The first fermentation takes place in small rotating barrels, while the second fermentation occurs in bottle according to the traditional method. The wine then spends 36 months on its lees before disgorgement at zero dosage, with no added sugar.
Food & Serving
Its dry, saline profile makes Molinar Extra Brut an excellent aperitif and a versatile partner for delicate starters, shellfish, oysters, seafood and fish dishes. It also pairs well with white meats and vegetable-based recipes, particularly those with fresh, mineral or lightly savoury flavours. Serve well chilled at approximately 8–10°C. Decanting is not recommended; serve directly from the bottle in quality sparkling-wine glasses to preserve its freshness and fine mousse.
Producer
Founded in 1975, Pojer e Sandri is a respected Trentino estate known for combining local terroir with thoughtful, technically precise winemaking. Molinar Extra Brut was created in an old mill and takes its name from this setting, while also celebrating Pinot Meunier’s traditional association with millers. Its 36 months of lees ageing, traditional-method production and zero-dosage finish reflect the estate’s focus on expressive, terroir-driven wines with clarity, character and regional identity.
