Production
Crafted in Italy’s Veneto region, this Metodo Classico Extra Brut reflects a cool, Alpine-influenced terroir that favors slow, even ripening of Chardonnay and Pinot Nero. Grapes are typically harvested by hand at optimal ripeness for sparkling wine, preserving high acidity and aromatic precision. After a gentle pressing, the base wines are fermented separately, then blended to create the final cuvée from the 2019 and 2020 harvests. The second fermentation takes place in the bottle, following the traditional method, with extended lees aging to build texture, fine bubbles, and complex bready notes. A very low dosage keeps the style firmly Extra Brut, highlighting the purity of fruit and the mineral backbone of the terroir.
