Tasting Notes
In the glass, this Brut Rosè displays a delicate, luminous salmon-pink hue with fine, persistent bubbles that form a graceful, continuous mousse. The nose opens with fresh red berries—think wild strawberry and raspberry—layered with notes of pomegranate, pink grapefruit zest and hints of rose petal, complemented by subtle brioche and almond tones from extended lees aging.
On the palate, it is dry, crisp and beautifully balanced, combining lively acidity with a creamy, refined texture. Flavors of red currant, cranberry, citrus and a touch of white peach unfold alongside gentle pastry notes and a faint mineral edge, reflecting its alpine origins. The finish is clean, precise and refreshing, with a lingering savory and floral nuance. Production
The grapes for Pojer e Sandri Metodo Classico Brut Rosè are sourced from high-altitude vineyards in Trentino Alto Adige, where steep slopes, cool nights and mineral-rich, well-drained soils yield grapes with exceptional freshness and aromatic intensity. Chardonnay and Pinot Nero are harvested by hand at optimal ripeness to preserve acidity and purity of fruit. After a gentle pressing, the base wines are fermented separately in temperature-controlled stainless steel, with careful blending to achieve the desired balance of structure and elegance. The second fermentation takes place in bottle according to the Metodo Classico, followed by an extended period of aging on the lees to build fine mousse, complexity and subtle autolytic notes before disgorgement and a restrained brut dosage.

This Brut Rosè is a versatile partner at the table, pairing effortlessly with salmon tartare, tuna carpaccio, charcuterie, sushi, prawn risotto, or lightly spiced Asian dishes. It also works beautifully with soft cheeses, prosciutto and delicate poultry preparations. Serve well-chilled at around 6–8°C to highlight its vibrant fruit and brisk acidity. A brief 10–15 minutes in the glass, or a very short decant in a wide-bottomed carafe, can help the wine open up aromatically, but prolonged decanting is not necessary—its delicacy is best enjoyed with the mousse at its freshest.
