Production
Pagus Camilla comes from a specially designated plot within the Le Sondraie vineyard, near a natural oasis of the same name in coastal Tuscany. The terroir is defined by alluvial sediments with elevated mineral content, which contribute to the wine’s notable tension and saline backbone. Grapes are carefully harvested by hand to preserve aromatic integrity, with strict selection in the vineyard. In the cellar, the Vermentino is vinified separately from other parcels, typically undergoing gentle pressing, temperature-controlled fermentation to lock in freshness and aromatics, and a period of refinement on fine lees to build texture, complexity, and length without overwhelming the natural purity of the fruit.

This Vermentino is a natural partner for seafood and Mediterranean cuisine: think raw or lightly cured fish, oysters, grilled prawns, seared scallops, octopus, and delicate white fish with herbs and olive oil. It also pairs beautifully with vegetable-based dishes, fresh goat cheese, pesto, and light pasta or risotto with shellfish. Serve well-chilled but not ice-cold, ideally around 8–10°C (46–50°F), to allow the aromatics to open.
