The Cabernet Sauvignon and Syrah are harvested by hand at optimal ripeness, with meticulous sorting to retain only the healthiest, most flavorful bunches. Vinification is deliberately gentle: a soft pressing and controlled fermentation of the free-run juice, with part of the must fermented in amphorae to emphasize purity and texture, and part in oak barrels to add subtle roundness and complexity.
