Tasting Notes
In the glass, Pagus Cerbaia 2018 shows a luminous, pale onion-skin to soft rose-petal hue, with coppery reflections that hint at both concentration and gentle evolution. The nose is delicate yet layered: wild strawberries, pomegranate and blood orange peel mingle with notes of rose petals, fresh herbs, a touch of white pepper and a faint, earthy-mineral undertone from the amphora and the sedimentary soils.
On the palate, this rosé is dry, precise and textural rather than overtly fruity. Juicy red berries, pink grapefruit and redcurrant are framed by a fine, saline backbone and a subtle spice from the Syrah. The Cabernet contributes structure and length, offering a gentle tannic grip and a long, savory finish with hints of Mediterranean scrub and crushed stone. In its 2018 vintage, the wine is drinking at a beautiful point now, with its primary fruit still alive yet integrated; it can handle another year or two of cellaring, but it is best enjoyed for its current balance of freshness and complexity.
Production
Pagus Cerbaia comes from a small, carefully selected parcel within Bolgheri, characterized by sedimentary soils that combine sand, silt and marine deposits, lending the wine its mineral edge and saline finesse. The vineyards benefit from cooling breezes off the Tyrrhenian Sea, preserving acidity and aromatic vibrancy in the grapes. The Cabernet Sauvignon and Syrah are harvested by hand at optimal ripeness, with meticulous sorting to retain only the healthiest, most flavorful bunches. Vinification is deliberately gentle: a soft pressing and controlled fermentation of the free-run juice, with part of the must fermented in amphorae to emphasize purity and texture, and part in oak barrels to add subtle roundness and complexity. The result is a rosé that is both transparent to its terroir and unusually structured for the category.
Food & Serving
This is a gastronomic rosé that shines at the table. Pair it with grilled Mediterranean fish, tuna tartare, octopus salad, or seafood risotto to echo its saline, mineral notes. It also works beautifully with charcuterie, roasted chicken with herbs, Niçoise-style salads, and lighter dishes featuring tomatoes, olives or grilled vegetables. Serve at around 10–12°C (50–54°F) to show both its freshness and texture.
