Podere Il Carnasciale Il Caberlot in Magnum format is one of Tuscany’s true cult reds, crafted entirely from the rare Caberlot grape and traditionally bottled only in large formats. This 2021 Magnum captures the essence of a single, unique vineyard and a single, unique variety, offering depth, elegance and remarkable aging potential. Revered by collectors and sommeliers alike, Il Caberlot helped define the modern era of Tuscan fine wine, long before “Super Tuscan” became a buzzword.

Tasting Notes
In the glass, Il Caberlot 2021 shows a deep, saturated ruby with garnet highlights at the rim, hinting at both concentration and structure. The nose is refined and layered: wild blackberry and black cherry interwoven with graphite, pencil shavings, crushed violets, rosemary, sage, and a touch of green olive and black pepper. Subtle notes of cedar, fine cigar box and dark cocoa emerge as it opens in the glass. On the palate, this is focused and precise rather than flamboyant: medium to full bodied with a core of dark, cool-toned fruit wrapped in ultra-fine, powdery tannins. Lively acidity gives the wine tension and lift, balancing flavors of blackcurrant, ripe plum, red cherry, and blood orange with savory nuances of tobacco leaf, iron, and dried herbs. The finish is long, linear and mineral, with a persistent saline edge and beautifully integrated oak. In Magnum, the 2021 has excellent aging potential; it will reward 10–20 years of careful cellaring, gaining complexity, silkier texture and more pronounced truffle, leather and underbrush notes over time.

Production
Il Caberlot comes from steep, stony hillsides in the Valdarno di Sopra area of Tuscany, between Florence and Arezzo, where rocky galestro, limestone and clay soils, combined with significant diurnal temperature shifts, give naturally low yields and intense, aromatic fruit. All work in the vineyard is done by hand, from meticulous pruning to green harvest and strict bunch selection at harvest, with an emphasis on sustainability and minimal intervention. The Caberlot grapes—an extremely rare crossing of Cabernet Franc and Merlot—are picked by hand at optimal ripeness, sorted rigorously, and fermented in small stainless-steel or cement vats with gentle extraction to preserve finesse. The wine is then aged in fine French oak barriques (largely used, with a judicious portion of new wood), where it undergoes malolactic fermentation and rests on its lees before being assembled and bottled, traditionally in Magnum, with minimal fining or filtration.

Food & Serving
This is a superb gastronomic wine, ideally suited to richly flavored dishes and simple, high-quality ingredients. Pair Il Caberlot with bistecca alla fiorentina, grilled lamb chops with rosemary, slow-braised beef cheeks, wild boar ragù, or roasted game birds. It also shines with earthy mushroom dishes—porcini risotto, truffle pasta—and aged cheeses such as Pecorino Toscano or Parmigiano Reggiano. Serve at 16–18°C (60–64°F); in Magnum format and at this youthful stage, decant for 2–3 hours before serving to allow the wine to fully open and reveal its aromatic complexity.

Producer
Podere Il Carnasciale is a tiny, family-run estate in the hills of Valdarno di Sopra, founded by Wolf and Bettina Rogosky, who set out in the 1980s to create a singular Tuscan wine from a singular grape. Working closely with agronomist Remigio Bordini, they planted the extremely rare Caberlot variety—discovered in Veneto and entrusted almost exclusively to them—making Il Carnasciale the spiritual home of this grape. Over the decades, the estate has become one of Tuscany’s most sought-after boutique producers, known for its microscopic production, obsessive attention to detail and benchmark status among collectors. With its limited releases, traditionally bottled only in Magnum, and its unwavering commitment to quality over quantity, Podere Il Carnasciale holds a unique and highly respected place in the Tuscan fine wine landscape.
