Tasting Notes
In the glass, this Champagne shows a luminous pale gold color with a delicate, persistent mousse and fine, streaming bubbles. The nose opens with fresh citrus and white floral notes—think lemon zest, acacia and blossom—layered with green apple, pear and hints of brioche, almond and chalky minerality.
On the palate, it is dry, precise and wonderfully poised, with a vibrant acidity that is balanced by a supple, creamy texture. Flavors of crisp orchard fruits and citrus are joined by subtle tones of toasted hazelnut, biscuit and a saline, mineral finish that speaks clearly of Champagne’s chalky soils. The wine is already beautifully approachable on release, yet the structure and freshness suggest it will develop added complexity—more nutty and briiochy nuances—over the next 3–5 years if cellared well.
Production
Ployez-Jacquemart sources grapes from select plots across the Champagne region, with a strong emphasis on Premier and Grand Cru vineyards rooted in chalk and limestone-rich soils that give finesse and mineral drive. The blend of Chardonnay, Pinot Noir (Pinot Nero) and Pinot Meunier is harvested by hand to allow rigorous selection of only the healthiest, ripest fruit. In the cellar, the musts are gently pressed and vinified in stainless steel and, in part, in small oak to preserve freshness while adding subtle complexity. A significant proportion of reserve wines is used to achieve the house’s signature style across vintages, and the wine spends an extended period on its lees in bottle before disgorgement, resulting in fine bubbles, texture and depth. Dosage is kept judicious, maintaining a crisp, Extra Quality Brut profile.
Food & Serving
This Champagne is versatile at the table, making it ideal both as an aperitif and throughout a meal. Pair it with oysters, scallops, sushi, sashimi, or delicately prepared white fish to highlight its mineral backbone, or enjoy it alongside poultry dishes, creamy risottos, soft cheeses or light charcuterie for a richer pairing. Serve well-chilled at about 8–10°C (46–50°F). Decanting is not necessary, but pouring the wine into proper tulip-shaped Champagne glasses and giving it a few minutes in the glass allows the aromas to fully open.
