On the palate, it is remarkably smooth and well-balanced, with flavors of lemon and passion fruit unfolding over a crisp, mineral backbone. The finish is long and expressive, with a subtle return of Mediterranean herbs. While already very enjoyable now, its structure and freshness suggest good short- to medium-term aging potential.

This organic Brut Metodo Classico comes from Sicily, where Carricante thrives on the volcanic slopes of Mount Etna. The grapes are harvested early to preserve natural acidity, and the vinification is carefully managed to emphasize the grape’s purity and the terroir’s marked mineral character, followed by traditional bottle fermentation to build finesse and complexity.

Food & Serving
Ideal with oysters, shellfish, sushi, grilled prawns, or light seafood antipasti, as well as fresh goat cheese and herb-driven dishes. Serve well chilled at 6–8°C, and decanting is not necessary; simply open shortly before serving to preserve its lively effervescence.
