Tasting Notes
In the glass, it typically shows a bright, polished straw-yellow color with elegant clarity. The nose is expressive and layered, with notes of citrus peel, ripe stone fruit, white flowers, subtle vanilla and fine mineral accents. On the palate, Didacus is generous yet beautifully balanced, combining creamy texture with vibrant acidity and a long, focused finish. Expect flavors of peach, lemon zest, toasted almond and delicate oak spice, with enough structure to develop gracefully over the next several years. It has very good aging potential for a premium Chardonnay, gaining complexity and harmony with bottle age.

Production
Didacus comes from carefully selected vineyard sites in Sicily, where warm Mediterranean sunshine is moderated by cooling influences that help preserve freshness in the grapes. The Chardonnay is harvested with a focus on optimal ripeness and aromatic precision, then vinified with great attention to detail to balance richness and tension. The winemaking typically includes temperature-controlled fermentation and maturation in oak, contributing depth, texture and complexity while preserving the wine’s elegant fruit character.

Food & Serving
This is an excellent match for refined dishes such as roast chicken, grilled lobster, creamy pasta, veal, or fish with beurre blanc. It also works well with mature cheeses and rich vegetarian dishes featuring mushrooms or truffle. Serve chilled at around 10–12°C, and a short period of aeration in the glass or a brief decant may help reveal its full aromatic range.
