Piot-Sévillano Extra Brut is a refined family-made Champagne from the Vallée de la Marne, crafted to show the fresh, fruit-driven style the house is known for. Made from Chardonnay and Pinot Meunier, it balances energy and roundness with a distinctly dry Extra Brut profile. Rooted in generations of family work, the cuvée reflects a thoughtful mix of tradition, sustainability, and modern winemaking.

Tasting Notes
In the glass, it typically shows a bright pale gold color with a lively mousse. The nose is expressive and clean, with notes of white flowers, crisp orchard fruit, citrus peel, and a subtle brioche edge from its time on the lees. The palate is precise and fresh, with Chardonnay bringing tension and citrus lift, while Pinot Meunier adds a soft, fruit-forward texture and a touch of generosity. The Extra Brut dosage keeps the finish dry and focused. It is best enjoyed young for its vibrancy, though it will hold well over the next few years as its complexity develops.

Production
Piot-Sévillano farms 8 hectares in Vincelles, in the Vallée de la Marne, where the soils and cool Champagne climate help preserve freshness and aromatic precision. The family has worked without pesticides for the past 20 years, uses organic fertilization, collects rainwater, and maintains HVE3 certification, reflecting a strong commitment to sustainable viticulture. This cuvée is vinified from estate-grown Chardonnay and Pinot Meunier, with careful handling to preserve purity and the house’s signature fruit-driven style.

Food & Serving
This Champagne is an excellent match for oysters, shellfish, sashimi, smoked salmon, or lightly seasoned seafood dishes. It also pairs beautifully with creamy goat cheese, sushi, or delicate poultry dishes. Serve well chilled at 8–10°C; decanting is not recommended.

Champagne Piot-Sévillano is a family estate based in Vincelles in the Vallée de la Marne, now led by Christine Scher-Sevillano and her husband Vincent. Their work combines deep family heritage with a progressive approach, including sustainable farming and minimal intervention in the cellar. Producing around 60,000 bottles annually from their own vines, the house has earned recognition for its broad range of expressive, fruit-forward Champagnes, including the focused ‘Les Caractérielles’ series highlighting Champagne’s key grape varieties.
