Tasting Notes
In the glass, this Champagne shows a pale straw to light gold hue, enlivened by a very fine, persistent mousse and delicate bead. The nose opens with vibrant aromas of lemon zest, green apple and white flowers, layered with hints of chalk, oyster shell, and a subtle touch of brioche and almond from extended lees aging.
On the palate, Delos Extra Brut is taut, linear and highly refined, with crisp citrus and orchard fruit wrapped around a core of saline minerality. Notes of grapefruit, pear and a whisper of white stone fruit are supported by a chalky, almost powdery texture and a long, dry, mouthwatering finish. The very low dosage allows the natural acidity and terroir to shine through, giving this wine excellent structure and energy. While it's beautifully drinkable now, it has the concentration and backbone to evolve gracefully over the next 5–8 years, gaining more complexity and creaminess with time in bottle.
Production
The Chardonnay for Delos Extra Brut comes exclusively from Grand Cru vineyards in Le Mesnil-sur-Oger, one of Champagne’s most revered terroirs, defined by deep chalk soils that endow the wines with striking tension and minerality. Vines are carefully tended and harvested by hand to ensure only perfectly ripe, healthy grapes reach the press. Pierre Moncuit is known for vinifying each plot separately in temperature-controlled stainless steel to preserve purity and freshness, and the Delos cuvée is typically based on a single harvest rather than a blend of many years, with no or minimal use of reserve wines. The wine matures on its lees in bottle for several years before disgorgement, developing texture and complexity, and is finished with a very low dosage in line with its Extra Brut style.
Food & Serving
This Champagne is a natural partner for pristine seafood: think freshly shucked oysters, scallop crudo, sashimi, poached langoustines or classic lemon and butter-dressed prawns. It also shines alongside goat cheese, ceviche, light fish dishes, sushi, and delicately prepared white meats such as roast chicken or veal in a light cream sauce. Serve well chilled, ideally at 8–10°C (46–50°F), in a fine, tulip-shaped Champagne glass to allow the aromas to open. A brief 10–15 minutes in the glass, or a very short, gentle aeration in a carafe, can help the wine fully express its floral and mineral complexity, but extended decanting is not necessary.
