Crafted primarily from Pinot Meunier with supporting roles from Chardonnay and Pinot Noir, it delivers a vibrant, gastronomic style far removed from simple, pale aperitif rosés. This cuvée reflects the traditional know-how of the Mignon family in the heart of Champagne, where generations have honed the art of expressive, terroir-driven wines.

Tasting Notes
In the glass, this Rosé de Saignée reveals a deep, luminous pink hue with ruby highlights and a fine, persistent mousse – a clear sign of extended contact with the red grape skins. The nose is generous and enticing, with aromas of wild strawberries, raspberries, redcurrants and cherries layered over hints of rose petals, blood orange, subtle spice and a touch of brioche from time on the lees. On the palate, it is fuller-bodied than many rosé Champagnes, with juicy red fruit at the core – think ripe berries, pomegranate and a hint of cranberry – supported by a lively citrus backbone and chalky minerality. The texture is creamy yet precise, with well-integrated bubbles and a dry, brisk Brut finish that keeps it fresh and food-friendly. The structure provided by Pinot Meunier and Pinot Noir suggests it will drink beautifully now but can also evolve for several years, gaining more savory, toasty and spicy nuances with careful cellaring.

Production
Sourced from vineyards in the Champagne region of France, Pierre Mignon’s Prestige Rosé de Saignée Brut reflects the classic local terroir of chalk, limestone and clay, which lends both tension and purity to the fruit. The grapes – predominantly Pinot Meunier, complemented by Chardonnay and Pinot Noir – are hand-harvested at optimal ripeness to preserve both aromatic intensity and natural acidity. For this saignée style, the red grapes undergo a short maceration on the skins to draw out color, flavor and gentle tannin before the juice is bled off and fermented. Vinification takes place in temperature-controlled vessels to protect freshness, followed by the traditional second fermentation in bottle and extended aging on the lees, which adds complexity, fine bubbles and a subtle, creamy dimension to the finished Champagne.

Food & Serving
This is a gastronomic rosé Champagne that shines at the table. Its intensity and structure make it ideal with salmon or tuna tartare, grilled prawns, sushi and sashimi, charcuterie, roast duck or herb-crusted lamb chops. It also pairs beautifully with Provençal cuisine, Mediterranean tapas and aged hard cheeses, and can carry through to berry-based desserts that are not overly sweet. Serve chilled at around 8–10°C (46–50°F); a brief time in the glass is usually enough to let it open up, though you can gently pour it into a chilled white wine glass to allow the aromas to unfold. Full decanting is generally unnecessary, but avoiding over-chilling will ensure the wine shows its aromatic complexity and fine texture.
