Sourced from Chardonnay vines rooted in the pure chalk soils of Chouilly, a revered Grand Cru village on the Côte des Blancs, this Champagne is all about terroir-driven clarity. Grapes are harvested by hand to preserve berry integrity and to allow for meticulous selection in the vineyard. After gentle pressing, the must is fermented in temperature-controlled stainless-steel tanks to retain freshness and aromatic purity, with partial reserve wines blended in to ensure consistency and complexity. The wine then undergoes its second fermentation in bottle and is aged sur lie for an extended period in the estate’s cellars, developing texture, depth, and fine bubbles before disgorgement and an Extra Dry dosage that lends its characteristic supple, approachable style.
