Tasting Notes
In the glass, this Champagne shows a pale, radiant straw color with green highlights and a fine, persistent mousse. The nose opens with classic Blanc de Blancs intensity: lemon zest, crisp green apple and white flowers layered with chalky minerality, hints of brioche and a touch of almond.
On the palate, Monographie Brut is taut and focused, with vibrant acidity that frames flavors of citrus, pear, and subtle stone fruit. Notes of freshly baked pastry, hazelnut and wet stone add depth, leading to a long, saline finish that feels both clean and complex. This cuvée drinks beautifully now for its energy and precision, but it also has the structure and acidity to evolve gracefully over the next several years, gaining more toast, cream and nutty complexity with time.
Production
Sourced from Grand Cru vineyards in the heart of the Côte des Blancs, predominantly around the chalk-rich slopes of villages like Chouilly, this Champagne is a pure expression of Chardonnay grown on cool, limestone soils. Grapes are carefully hand-harvested at optimal ripeness to preserve acidity and aromatic freshness, then gently pressed to obtain the finest juice. Fermentation takes place in temperature-controlled vessels, and a portion of reserve wines is often blended in to ensure consistency and depth. The wine then spends an extended period aging on its lees in bottle, developing its creamy texture and fine bubbles before disgorgement and a carefully judged brut dosage to balance tension and finesse.

This Grand Cru Blanc de Blancs is a natural partner for refined seafood: oysters, scallops, sushi and sashimi, as well as lobster, crab, or simply prepared white fish. It also shines with goat cheese, soft-ripened cheeses, light poultry dishes and elegant canapés. For best enjoyment, serve well chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in the glass or a wide-bowled flute allows the aromas to open; decanting is generally not necessary, but pouring into a slightly larger white wine glass can enhance nuance and complexity.
