Tasting Notes
In the glass, Coste Beert shows a luminous, pale gold color with subtle green reflections, crowned by a fine, persistent mousse. On the palate, this Grand Cru Blanc de Blancs is both generous and taut, with a linear, precise structure. Production
Coste Beert is drawn from a single, symbolically important vineyard that overlooks the Grand Cru village of Chouilly, on the Côte des Blancs—an area renowned for its deep chalk soils and cool, east-facing slopes. These conditions are ideal for Chardonnay, giving wines of notable purity, tension, and mineral intensity. Grapes are carefully hand-harvested at optimal ripeness to preserve freshness and aromatic precision. In the cellar, gentle pressing and meticulous clarification protect the delicacy of the juice, followed by a controlled first fermentation in temperature-regulated vessels. Extended maturation on the lees in bottle allows the wine to develop its fine mousse, complexity, and creamy texture, while still showcasing the crystalline, mineral backbone of this Grand Cru terroir.
Food & Serving
This Champagne’s finesse and chalky precision make it a natural partner for refined seafood dishes such as oysters, scallop carpaccio, ceviche, and lobster or langoustines served simply grilled or poached. It also pairs beautifully with sushi, sashimi, caviar, and delicate white fish, as well as creamy goat cheeses or a light tart of leeks and cheeses. Serve well chilled at around 8–10°C (46–50°F).
