Conceived as the estate’s true signature cuvée, it brings together fruit from different vineyards to form a harmonious, layered whole. This cuvée pays homage to a terroir with centuries of vine-growing tradition, offering a modern interpretation of Champagne rooted in history.
Tasting Notes
In the glass, Brut Orior shows a bright, pale gold hue with fine, persistent bubbles that form a delicate mousse. On the nose, it opens with notes of ripe citrus, crisp green apple and white peach, followed by hints of brioche, toasted almond and subtle floral tones. Gentle touches of red berries from the Pinot Noir add a further aromatic dimension.
The palate is both generous and precise, combining the chalky tension of Chardonnay with the roundness and structure of Pinot Noir. Expect a lively, refreshing attack, evolving into flavors of lemon zest, pear, stone fruit and a touch of redcurrant, layered over nuances of pastry, hazelnut and mineral salinity. The finish is long, clean and mouthwatering, with a fine balance between richness and freshness. Production
Brut Orior is sourced from selected vineyards within the Champagne region, where chalk and limestone-rich soils contribute finesse, purity and a distinct mineral backbone. Grapes are typically harvested by hand to ensure only healthy, perfectly ripe bunches make it to the press, preserving delicacy and aromatic intensity. In the cellar, each variety and parcel is vinified separately, allowing the winemaker to assemble a nuanced blend that reflects the house style. Secondary fermentation takes place in the bottle following the traditional méthode champenoise, with extended lees aging to build texture, fine bubbles and the characteristic notes of brioche and pastry.
Food & Serving
This Champagne is a versatile partner at the table, ideal as an aperitif or alongside refined dishes. Pair it with oysters, scallops, sushi, delicate fish carpaccio or lightly grilled seafood to highlight its freshness and minerality. It also complements poultry in cream sauces, soft cheeses such as Brie or Camembert, and elegant canapés. Serve well-chilled at around 8–10°C (46–50°F); a brief opening in the glass, or a short 15–20 minutes in an ice bucket after uncorking, will allow the wine’s complexity to unfold. Decanting is not necessary, but using fine, tulip-shaped Champagne glasses will best showcase its aromas.
