Tasting Notes

Production
The grapes for Pierre Leboeuf Grand Cru come from small, carefully tended parcels in and around Aÿ in the Vallée de la Marne, including a clos (a walled vineyard) that offers a particularly sheltered and characterful terroir. The Grand Cru chalk and limestone soils contribute both tension and precision, while the exposure of the vineyards allows Pinot Noir and Chardonnay to ripen fully without losing acidity. The Leboeuf family harvests exclusively by hand, ensuring careful selection in the vineyard. After pressing with a modern, gentle press (the old family press is kept as a testament to previous generations), the must undergoes its first fermentation in the cellar. In December, after the initial fermentations, Vincent Leboeuf tastes each base wine and decides on the blending for the final cuvées. The second fermentation and aging take place in a traditional vaulted cellar carved into the hillside, where the bottles rest directly on the old cellar floor. The Champagne is matured on the lees, then placed on wooden pupitres and hand-riddled before disgorgement. Disgorgement is carried out partly by machine and, for selected cuvées, still by hand—an exacting method that preserves the purity of the wine while respecting time-honored craftsmanship.

Serve well chilled, ideally at 8–10°C (46–50°F), to highlight the wine’s tension and aromatic detail.
