Tasting Notes

Production

Vines are typically farmed with an emphasis on careful manual work in the vineyard, with hand-harvesting to ensure only the healthiest grapes are brought to the press. Chardonnay and Pinot Noir are gently pressed in whole clusters, and the base wines are fermented in temperature-controlled vessels to preserve freshness and purity of fruit. Partial or full malolactic fermentation may be allowed, depending on the vintage character, to strike the right balance between vivacity and texture. After blending, the wine undergoes its second fermentation in bottle and is aged on its lees for an extended period, building complexity and fine mousse, before being disgorged with a very low dosage in line with the Extra Brut style.

This 1er Cru Extra Brut is a versatile gastronomic Champagne, ideal with oysters, scallops, and other delicate shellfish, as well as sashimi, citrus-dressed ceviche, or simple grilled white fish.
