Philippe Gonet Belemnita Blanc de Blancs Grand Cru 2008 is a rare, single-vineyard expression of Chardonnay from the hallowed slopes of Le Mesnil-sur-Oger. Sourced from meticulously tended Grand Cru vines, some planted as far back as 1929, it captures the laser-like precision and chalky elegance that have made this village legendary among Champagne connoisseurs. Produced only in vintages of truly outstanding quality, Belemnita is crafted as an uncompromising, pure reflection of its terroir rather than a blended house style.

Tasting Notes
In the glass, this 2008 Blanc de Blancs shows a luminous, pale gold hue with fine, persistent bubbles that form a delicate cordon – a visual cue to its extended aging in the cellar. The nose is immediately complex and refined, weaving together aromas of lemon zest, white flowers, green apple, and pear with deeper layers of chalk dust, toasted brioche, roasted hazelnut, and a subtle salinity that speaks directly of Le Mesnil’s fossil-rich soils. On the palate, the wine is at once incisive and generous, with a taut, mineral-driven backbone wrapped in a creamy, finely textured mousse. Flavors of citrus confit, ripe orchard fruit, and white peach interplay with brioche, almond, and light pastry cream, all lifted by a vibrant, almost electric acidity. The extra-brut dosage keeps the profile dry, precise, and wonderfully mouthwatering, allowing the chalky minerality to shine through. Thanks to at least six years of cellar aging and the inherent structure of the 2008 vintage, this Champagne has excellent aging potential; it is compelling now but will continue to gain complexity, tertiary notes, and depth over the next decade or more.

Production
Belemnita originates from Philippe Gonet’s best Chardonnay parcels in the Grand Cru village of Le Mesnil-sur-Oger, a terroir famed for its pure, chalk-rich subsoils formed in the Tertiary period and studded with belemnite fossils (Belemnita Quadrata), remnants of ancient marine life that lend both its name and distinctive mineral profile. Vines, including some planted in 1929, are carefully tended with low yields, and harvest is strictly selective, with meticulous hand-picking and sorting of each individual bunch to capture only pristine, perfectly ripe fruit. The wine is vinified as a single, unblended cuvée – no assemblage from other villages – to preserve the precise character of Le Mesnil. It then rests for a minimum of six years on its lees in the cool, constant 12°C environment of the estate cellars, developing its fine mousse, complexity, and depth before disgorgement and a restrained extra-brut dosage that ensures a pure, terroir-driven style.

Food & Serving
This highly refined Blanc de Blancs shines at the table with elegant, mineral-driven dishes. Pair it with oysters, caviar, or refined shellfish such as langoustines and scallops, as well as delicate white fish crudo, sushi, or sashimi. It also complements lobster with light butter sauces, turbot, or Dover sole, and can elevate fine poultry dishes with cream-based or truffle-inflected sauces. Serve well-chilled but not icy, ideally around 9–11°C (48–52°F), to allow the aromatics and texture to fully emerge. A gentle decant into a chilled carafe, or simply pouring the first glass and letting the wine open in the bottle and glass for 10–15 minutes, can further reveal its layered complexity.
