Tasting Notes
In the glass, this XO shows the depth and maturity you would expect from long-aged Cognac, with a rich, amber-gold appearance. The bouquet is complex and layered, offering mature oak, dried fruit, spice, and a rounded rancio character that develops with time in the glass. On the palate, it is generous and refined, with a smooth, well-aged texture and a long, warming finish. The Grande Champagne eaux-de-vie bring elegance and finesse, while extended maturation adds balance, depth, and impressive complexity. This Cognac is built for slow enjoyment and should age beautifully in bottle, though it is already fully expressive now.

Production
This Cognac comes exclusively from the family’s Les Bergeronnettes vineyard in Grande Champagne, whose chalky terroir is prized for producing eaux-de-vie with remarkable finesse and aging potential. Best enjoyed neat as a contemplative after-dinner drink, ideally at room temperature in a tulip glass to concentrate the aromas. It pairs well with dark chocolate, crème brûlée, aged Comté, or a fine cigar, and decanting is not necessary, though a few minutes in the glass will help the aromas open fully.
