This is a highly characterful white Burgundy from one of the region’s rising small domaines, crafted in tiny quantities with meticulous, artisan care.

Tasting Notes
In the glass, the 2022 En Chevrot shows a pale lemon color with subtle green reflections, hinting at its youthful energy. The nose opens with crisp notes of lemon zest, green apple, and white peach, backed by chalky minerality, wet stone, and a delicate floral lift—think acacia and spring blossoms. Gentle nuances of fresh hazelnut, light brioche, and a whisper of oak spice suggest careful élevage rather than heavy-handed wood. On the palate, the wine is taut yet generous: vibrant citrus and orchard fruit wrapped around a core of saline, limestone-driven tension. Production
The fruit for this wine comes from En Chevrot, a well-regarded site in Saint-Romain known for its higher elevation, cooler exposures, and limestone-rich soils that naturally favor fresh, mineral Chardonnays. Farming is carried out along organic, low-intervention lines, with an emphasis on healthy, balanced vines and moderate yields. Grapes are typically harvested by hand to preserve berry integrity, then gently pressed as whole clusters. The must is fermented with indigenous yeasts and raised in Burgundy barrels (often larger formats and a modest proportion of new oak) to respect the purity of fruit and terroir. Sulfur is used sparingly, and the wine is bottled with minimal handling to retain its energy and precision.

Food & Serving
This Saint-Romain Blanc is an excellent partner for simply prepared seafood—think oysters, scallops, grilled prawns, or poached white fish—as well as roast chicken, veal in light cream sauces, and dishes with seasonal vegetables like asparagus, fennel, or leeks. It also works beautifully with soft-rind cheeses such as Brie, Chaource, or young Comté. Serve at 10–12°C (50–54°F) to highlight its freshness and complexity. Decanting for 20–30 minutes can help the aromatics open up, especially in its youth, but is not strictly necessary if served in a good-sized white wine glass.
