Tasting Notes
In the glass, the wine shows a deep, dark color that hints at its concentration and richness. The nose opens with dark cherries, plums, chocolate, black truffles, leather, liquorice, and a touch of cigar box, creating a layered and highly expressive aromatic profile. The palate is medium-bodied with a velvety texture and a beautifully integrated structure. Flavors mirror the nose closely, with ripe black fruit wrapped in savory, earthy nuance and oak-derived spice. While already enjoyable now, it should continue to develop well over the next few years, gaining even more complexity and harmony with time.

Production
L’Esprit des Pavots is the second wine of Les Pavots Estate Bordeaux Red Blend, but it is made with the same care and from estate fruit grown in Peter Michael’s Les Pavots and Au Paradis vineyards in California. The 2019 blend is composed of Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot, vinified by Nicolas Morlet and matured for 18 months in French oak barrels. The result is a refined and terroir-driven wine with strong classical influences.

Food & Serving
This wine pairs beautifully with grilled ribeye, roast lamb, braised short ribs, duck breast, or mushroom-based dishes. It also works well with aged cheeses and truffle-inflected cuisine. Serve at 16–18°C, and decant for about 30–60 minutes if drinking now to help the wine fully open up.
