Peter Michael L’Esprit des Pavots 2018 is a polished Bordeaux-style blend from one of California’s most admired estates, offering remarkable depth, finesse, and immediate appeal. Though it is the estate’s second wine, it shows none of the usual compromise, drawing fruit from the winery’s own Les Pavots and Au Paradis vineyards and carrying the unmistakable signature of a great vintage.

Tasting Notes
In the glass, it presents a deep, inviting color that hints at its concentration and structure. The nose opens with dark cherry, plum, chocolate, black truffle, leather, licorice, and a refined cigar-box character, all lifted by the elegance that defines the 2018 vintage. On the palate, the wine is medium-bodied yet wonderfully velvety, with supple tannins and a seamless flow of classic Bordeaux-inspired flavors. There is enough richness to satisfy now, but the balance and composure suggest very good aging potential over the coming years.

Production
L’Esprit des Pavots is crafted from Peter Michael’s own vineyards, Les Pavots and Au Paradis, in California, where the terroir lends both ripeness and structure to the blend. Winemaker Nicolas Morlet combines Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot, then matures the wine for 18 months in French oak to build complexity and polish without overshadowing the fruit.

Food & Serving
This is an excellent match for roast lamb, filet of beef, venison, duck breast, and dishes with mushrooms or truffle. Serve at 16–18°C, and consider decanting for 30–60 minutes if opened young to allow the aromas and texture to fully unfold.
