Built primarily on Cabernet Sauvignon and rounded out with Cabernet Franc, Merlot, and Petit Verdot, it combines depth, finesse, and remarkable aging potential in a style that recalls the elegance of top Left Bank Bordeaux.

Tasting Notes
In the glass, it shows a deep, насыщенный ruby-purple hue with impressive concentration. The nose is layered and expressive, opening with dark cherry, blackberry, and blueberry coulis, then unfolding into notes of morels, fresh leather, vanilla, dark chocolate, and sweet tobacco. On the palate, it is full-bodied and powerful, yet polished and beautifully balanced, with ripe black fruit at the core and savory complexity weaving through the finish. The texture is velvety and generous, and the wine has the structure and concentration to age gracefully for the next 20 to 30 years.

Production
Les Pavots comes from Peter Michael Winery’s own vineyard in Knights Valley, California, a site known for producing deeply flavored, structured Bordeaux varieties. The 2018 blend was composed of 62% Cabernet Sauvignon, 18% Cabernet Franc, 13% Merlot, and 7% Petit Verdot, and was aged for 18 months in 100% French oak barrels before being bottled unfined and unfiltered, preserving maximum texture and purity.

Food & Serving
This is an excellent match for richly flavored dishes such as grilled ribeye, roast lamb, beef Wellington, braised short ribs, or duck with a wine reduction. Serve at around 16–18°C and decant for at least one hour, ideally a little longer if opening it young, to allow the aromatics and structure to fully open up.
